Outback Huckleberry Hooch Recipe

Ingredients: 1.5 L (6 cups) of huckleberries 1.125 L (4 and 1/2 cups) of sugar

7.5 mL (1 and 1/2 teaspoons) of citric acid Water to make up the volume to 2L Yeast: One package of wine yeast or one tablespoon of bakers’ yeast

Method: 1) Boil huckleberries with sugar and citric acid in two litres (eight cups) of water for ten minutes. Remove from heat and cool.

2) Strain off berries, squeezing as much juice out as possible back into the pan.

Ingredients: 1 liter of vodka (preferably cheap) 1 kg huckleberries (or any other berries of your choice)

2 cups sugar 1 cup water Directions:

1. Combine the sugar and water in a pot over medium heat, stirring until the sugar has dissolved. 2. Add the berries and continue to cook for about 5 minutes, or until the berries have broken down and released their juices. 3. Remove from heat and let cool slightly before adding the vodka.

4. Pour into bottles or jars and seal tightly. Store in a cool, dark place for at least 2 weeks before enjoying!

2 quarts water Directions: 1) Pick the huckleberries and remove stems.

If you are using frozen huckleberries, thaw them first. 2) In a large pot, mix together the huckleberries, sugar, Welch’s White Grape Cherry juice and water. 3) Bring the mixture to a boil over medium heat, stirring occasionally.

4) Once it reaches a boil, reduce the heat to low and let simmer for 30 minutes. 5) Remove from heat and let cool slightly. Using a blender or food processor, blend the mixture until smooth.

6) Pour into clean glass jars or bottles and add 7-Up or Sprite until each bottle is three-quarters full. Seal with a lid (screw on top for canning jars). Keep refrigerated for up to two weeks.
