Remove from processor or bowl; shape into 2 balls. Wrap each ball tightly in plastic wrap; refrigerate for at least 1 hour before using. (The dough may be made up to 2 days ahead.) To make filling: In a large skillet over medium-high heat cook beef until browned; drain off any excess fat. Add onion bell pepper garlic jalapeño cumin seeds salt black pepper and tomato paste; mix well. Cook stirring often for 4 minutes longer. Remove from heat; let cool slightly.(The filling may be made up to 1 day ahead cooled completely then covered and refrigerated.) On a lightly floured surface roll each ball of dough into an 8-inch circle about 1/8 inch thick. Place half of the filling on one side of each circle leaving a 1/2-inch border around edge; brush border with some of the beaten egg white if desired.
